We’re all really relying on comfort food these days. What are your go-to comfort foods?

All kinds of pasta, but it has to be with homemade noodles! Luckily, I have perfected my pasta-making skills and always have some homemade noodles in the freezer I can grab (freshly made noodles keep for a couple of months in the freezer). The pasta dough recipe I use is just two cups of all-purpose flour and three eggs. So easy, so good!⠀

Currently, my go-to pasta recipe is canned sardines, lemon, capers, parsley, and breadcrumbs. Super easy! And my favorite dessert is chocolate chip cookies.

What are your pantry staples?

  1. Sardines — I use them for sardine pasta, sardine salad, or just a little healthy protein snack.
  2. Good quality olive oil — This is how I dress my salads — just a little olive oil and salt.
  3. Popcorn kernels — My go-to snack! And I always make it on the stove. It’s so much better than microwave popcorn.
  4. Nuts and seeds — I always have an assortment of walnuts, pine nuts, and sunflower seeds. I use them for topping salads or for a snack.
  5. Avocado
  6. Quinoa

What’s your weeknight cooking routine like?

Grocery shopping happens on Saturday or Sunday, and with those groceries, I usually have a few different meals I can make with the ingredients. I don’t find it super hard to get dinner on the table, as my go-to weeknight dinner is something like a salad or a bowl. So as long as I have a base of greens/quinoa, veggies, protein, and some herbs, avocado, something crunchy to top it with, it’s pretty easy for me to mix and match things.

I love the idea of mixing and matching ingredients throughout the week. Do you and your husband, Justin, cook together?

We’ll make something on the weekends together usually, something that takes a little bit more time. We both love cooking and making new dishes, so it’s pretty easy for us to divvy up the tasks.

    I love this Q+A style post! With being in quarantine right now I am slowly trying to cook more and try new recipes! Have so much free time on my hands. Those Persian meatballs look amazing! I will have to give them a shot.
